Gluten Free Vegan Oil Free Strawberry Cupcakes


Artemis really didn’t have any interest in food until a few weeks before her 1st birthday. She had really only nibbled on a cookie and dabbled with a few tastes of fruit and such by that day but when she had her first taste of a strawberry she was hooked! She couldn’t get enough! So as her birthday approached I searched for a vegan gluten free strawberry cake recipe and to my surprise I didn’t find a single one! I then just looked for a gluten free strawberry cake recipe I could veganize and I couldn’t even find that! So, though baking is not my forte, I decided to just invent my own recipe-I mean, what’s the worst that could happen? My first attempt was a success but it was a bit gritty. Even so we devoured all 24 cupcakes in the blink of an eye! On my second attempt (we had to try again, right? It was for science!) I switched to oat flour and they were perfect! Of course all of the ingredients were organic and , where applicable, fair trade. So, here is my recipe. Let me know how it turns out!

 
Artemis’s (Gluten Free, Oil Free, Organic, Fair Trade) Strawberry Cupcakes
2.5 cups oat flour
1/2 cup tapioca starch
1t baking soda
2t baking powder
1t salt
3T milled flax
2/3 cup apple sauce
1/2 cup maple syrup
4t vanilla
1lb puréed strawberries (I puréed the leaves and all!)
Fill cups 3/4 full
Bake at 350 for 18 minutes
After they cool top with vegan butter cream, chocolate ganache, whipped coconut cream, or even eat them naked!
Makes 24 cupcakes
